A proper naturally-leavened loaf with a crackly crust and open crumb. Most of the work is waiting, and the dough is far more forgiving than it looks.

Bulk fermentation timing

Aim for 40% bigger, and no more than 50%. Time is only ever a guide — watch the dough, not the clock.

Getting the crust right

Three things do the work, and they stack:

A properly preheated Dutch oven. Cast iron holds far more heat than air. Half an hour at 240°C with the lid on means the loaf hits a searing surface the moment it lands, which is what drives the oven spring.

A frozen loaf. Straight from the freezer the surface is firm, so the blade glides instead of dragging, and the score opens cleanly instead of tearing.

Ice cubes. Two or three down the side of the pot flash to steam under the lid. Steam keeps the crust flexible while the loaf rises, then the lid comes off and it crisps and colours.

Three ways to fit it around your day

A daytime bake. Mix at 8:00am, rest at 8:30, salt in at 9:00, folds from 9:30 through to about 12:30. Bulk ferment through the afternoon, watching the dough. Laminate, shape and refrigerate that evening, then bake the next day.

An overnight bulk ferment. Mix at 4:00pm, do your folds between 5:00 and 8:00pm whenever it suits, then bulk ferment overnight. Shape and refrigerate in the morning, and bake when you're ready.

Minimal effort. Do the folds whenever you can. Let the bulk ferment run long if it needs to. Shape when the dough looks ready and refrigerate until it's convenient. This dough really is forgiving.
